    Those roasted tomatoes look awesome, but that recipe is much more complicated than it needs to be. I roasted pounds and pounds of tomatoes this fall from our garden. I didn’t have romas, so I just did large slices (or halved cherry tomatoes) on a cookie sheet liberally greased in olive oil. I didn’t even peel them — the peels and seeds just cook down as they roast. I pureed most of mine to use in sauce, but the roasted cherry tomatoes were delicious on salads, and would have been amazing in pasta or as a pizza topping. Definitely worth it if you have some tomatoes to hand.
